Who am I?

So my name is Sarah and I am a 20-something and I currently live in Canada’s capital; Ottawa. I hail from the sandy red beaches of Prince Edward Island and work in the capital city as a nurse. I’m a runner – currently training for my first marathon with these lovely ladies: http://2ironlungs.com/ – and love to casually practice yoga and pilates on the side. I love to cook, bake, and most importantly, eat! I’ve also become more inspired to create my own ‘things’ and to challenge myself to be less wasteful. I also have the sweetest puppy dog; Prudence!

Blueberry Pancake Muffins

Before I started my set of shifts last week I went through my usual conundrum of ‘whatever will I eat?’. I’m not a picky eater, but I do get bored very easily and quickly. So what to do, what to do. Check Pinterest before letting the panic set in of course. I found a little something called ‘Pancake bites’. Sounded interesting to me but I didn’t want to use a boxed mix so my Pinterest search continued and I found this recipe that let me make a fresh mix: http://sipsandspoonfuls.com/2011/01/fluffiest-pancakes-ever.htmlFotor0724165937

Ingredients:
1 cup plain flour
1 tablespoon baking powder
1 tbs sugar
pinch of salt
2 large eggs, slightly beaten
1 1/4 cup milk
1/4 cup butter, melted and cooled
1 tbsp maple syrup

Add-ins: Blueberries (or any other fruit – mine were fresh but frozen would work as well), breakfast meat (sausage or bacon)

So I think my favorite part of this whole recipe is that it is so. easy. to. make!! Dump all of the first eight ingredients into your bowl and mix them up. A few little lumps and bumps are a-ok.

Now toss your add-ins into the mix. I used fresh blueberries.

Once well combined, the batter goes into prepared muffin tins (either greased or into liners). I filled mine to about the 3/4 mark.

Now into a pre-heated 350 degree oven for 12-14 minutes or until the tops are golden.

I ate mine as is but if you like your food a little sweeter you could drizzle them with a little more maple syrup.

These were delicious and translated into tasty work snacks that were just fine cold. The pancake mix itself was made up of ingredients that I keep in my pantry. As much as I like buttermilk pancakes, it’s not something I keep on hand. Easy and yummy. Next time I’ll do a little experimentation with breakfast meats. Sausage in a muffin…mmm!

To sum up (for those who don’t wish to scroll):

Preheat your oven to 350.

Mix the following 8 ingredients:

1 cup plain flour
1 tablespoon baking powder
1 tbs sugar
pinch of salt
2 large eggs, slightly beaten
1 1/4 cup milk
1/4 cup butter, melted and cooled
1 tbsp maple syrup

These ingredients don’t need to be smooth, just mixed enough to combine. Then toss in your add-ins.  Pour the batter into your greased or lined muffin tins to about 3/4. Bake for 12-14 min or until tops are golden brown. Enjoy! With or without a little extra syrup.
